Agri-food systems face numerous risks at different levels due to outdated techniques, poor infrastructure, climate change or consumer behaviour, among others. To help strengthen the resilience of our food systems, food technologies appear to be a crucial tool as it can help to increase food production, create more balance in the market, improve the food value chain, or even optimize raw materials.
